Cheeseburger Soup

When my friend told me we were going to have a cheeseburer soup I started to believe she became crazy. For me a cheeseburger is a cheeseburger and a soup is a soup. Well if you think the same to me just try it and you will be so surprised.

Ingredients:

1 lb ground beef
2 tablespoons olive oil
1 cup shredded carrot
1 onion, diced
1 cup chopped celery
3 cups chicken broth
1 teaspoon dried parsley
4 cups potatoes cut into cubes
1/4 cup all-purpose flour
2 cups cheddar cheese diced
4 tablespoons butter
1 1/2 cups milk

Method

In a soup pot, heat the olive oil over medium high heat. Add the beef and onion and cook until brown.
Add the chicken broth, carrots, celery, potatoes and parsley. Bring to a boil, and then reduce to a simmer and cook for about 12 minutes or until the potatoes are tender.
In a saucepan, melt the butter and stir in the flour. Add the milk and stir until smooth.
Then gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce to a simmer.
Stir in cheese and keep stirring until the cheese is totally melted.
Serve and enjoy.
