A perfect recipe if you are looking for healthy food or if you are trying to loose a little bit weight.
Ingredients:
1 (12 ounce) package firm tofu
1/2 cup seasoned bread crumbs
1 (8 ounce) can tomato sauce
5 tablespoons grated Parmesan cheese
3 tablespoons olive oil
1/2 teaspoon dried basil
2 teaspoons dried oregano, divided
1 clove garlic minced
4 ounces mozzarella cheese shredded
Salt and pepper to taste
Method
Preheat your oven to 400 F.
In a small bowl, combine the 2 tablespoons Parmesan cheese, breadcrumbs, 1 teaspoon oregano, salt, and black pepper.
Slice the tofu into 1/4 inch thick slices, and place in a bowl of cold water. One at a time, press the tofu slices into the breadcrumb mixture, turning to coat all sides.
In a medium skillet, heat 2 tablespoons olive oil over medium heat. Add the tofu slices and cook until crisp on one side. Then drizzle with the remaining olive oil, turn, and brown on the other side.
Combine the tomato sauce, garlic, basil, and the remaining oregano. In an 8 inch square baking pan, pour a thin layer of the sauce.
Arrange the tofu slices in the baking pan. Spoon the remaining sauce over the tofu. Top with the shredded mozzarella and the remaining 3 tablespoons Parmesan cheese.
Place in the oven and bake for 20 minutes.
